I just installed Vikunja 24.3 from the .deb package on an Ubuntu 24.04 machine.
After creating a new user I’m getting Internal Server Errors because the time zone isn’t set although I set the time zone in the config file.
Is there a way to set a default time zone for new users?

Yes, I set it to Europe/Berlin. Does it have to be in quotes BTW?
No need for quotes. Did you change it before or after registering the account? The default settings option are only evaluated when the account is created. If you have an invalid value in the user settings saved to the database now, you need to manually remove that. An sql statement like this should work (untested! Make a backup first):
update users set timezone = null
